Creamy Whipped Potatoes (Paleo, Whole30)

Whipped to creamy, fluffy perfection, these mashed potatoes are so good you be looking for main dishes to serve this with! Take it to the next level by adding a few tablespoons of this easy homemade garlic herb butter and you will have a side dish that was made in heaven! These delicious, buttery, and mouthwatering potatoes will steal the show at your next dinner.

Creamy Mashed Potato Recipe

I love to make these potatoes when I am looking for a comforting and hearty side that is super easy to make, or when we are entertaining because they are so good with almost every single main! We recently had some dinner guests over and I made these to accompany a delicious and juicy tenderloin, and the whipped potatoes were such a hit, they went back for seconds and thirds! I promise you will love these as much as we do!



 

Why Russet Potatoes are So Good For You!


In the past, white potatoes, such as russets, have received a bad wrap for not being healthy for you since they are a "white" food, but this is very far from the truth. Let's just talk about all the benefits your body gains from these nutrient rich tubers!


Russet potatoes are so good for you because they contain various vitamins, minerals, antioxidants, and flavonoids [1]. This includes an array of B vitamins to support your metabolism, and vitamin C, an antioxidant, that is necessary in health and in the protection of your cells.


Did someone say minerals? Well, russet potatoes are high in minerals and contain calcium, zinc, iron, phosphorus, magnesium, and potassium. Did you know that potassium is the fourth most abundant mineral in your body? It is an essential electrolyte necessary in nervous system function, metabolism, hydration, and in regulating your heartbeat [2].


Does Organic Matter? That depends on what you are buying, and when it comes to potatoes, I always buy organic and here's why...root veggies grow underground and absorb everything in the soil they are grown in. This is a personal choice, and not everything you buy has to be organic, check out EWG's Dirty Dozen and Clean Fifteen as they update their list of the recommend produce they recommend buying organically if possible as well as the conventional ones that are safe to buy.

Paleo Mashed Potato Recipe

Creamy Whipped Potatoes Ingredients

Serves 6-10


3 lbs Organic Russet Potatoes, peeled and large diced (2”)

1 Tbsp Coarse Sea Salt

1/4 cup Unsalted Grass-Fed Butter*, melted

1 cup Organic Whole Milk*, warmed

1 tsp - 1 Tbsp Real Salt


*Substitute unsalted ghee and plant milk for Paleo/Whole30 mashed potatoes


How to Make Creamy Whipped Potatoes


1. Rinse and peel the potatoes and cut then into 2" chunks.


2. Transfer the potatoes to a large pot and fill with enough water to cover the potatoes.


3. Add 1 Tablespoon of coarse sea salt and bring the potatoes to a boil over high heat.


4. Once the water starts to boil, reduce the heat to medium-high and cook for about 12-15 minutes until the potatoes are very tender.


5. Remove from heat and drain the potatoes in a colander.


6. Allow the potatoes to sit for 3-5 minutes to let all the water drain out.


7. Transfer the potatoes to the bowl of a standing mixer or back to the pot you boiled the them in if you are using an electric hand mixer.


8. Add 1 teaspoon of salt, the milk and melted butter and whip on high for 4-5 minutes until light and fluffy, stopping to scrap as needed and season with more salt if desired.


9. Top with grass-fed butter and serve!

Q: Why are my potatoes gummy?

A: Overwhipping the potatoes my yield a more gummy texture, also, be sure to use russet potatoes as yukon and yellow potatoes can yield a more gummy whipped potato.


Q: Why are there still chunks of potatoes in my whipped potatoes?

A: Your potatoes may not have been fully cooked, be sure to test the doneness with a paring knife or fork.


Q: Can I leave the skin on the potatoes?

A: Yes, of course, not only will you add to the nutrient density, but also make a more rustic and homestyle mashed potato dish!
