Vegan Paleo Pesto Sauce

Easy sweet basil pesto without all the dairy, perfect to toss with pasta, spread over a sandwich, or top grilled chicken.

Pesto Recipe

Vegan Paleo Pesto Sauce

1/2 cup Raw Cashews

1/2 cup Raw Macadamia nuts

1/2 cup Raw Pine nuts

1/2 cup Raw Pepitas

1 tsp Sea salt

1/2 tsp Black pepper

1/4 cup Fresh Lemon juice

1 Whole Lemon

3 Cloves Garlic

6-8 cups Fresh Basil

1 1/4 cup EVOO


Cut the ends off the lemon and leave about 30% of the rind on. Cut in half and remove seeds and core.

In a food processor, combine nuts, lemon, garlic and spices until a thick mixture forms. Add basil and process until combined, you may need to stop and scrape a time or two.

On low speed drizzle in EVOO until well combined. If mixture is too thick, add some filtered water until it is at a consistency you like.

Enjoy and keep refrigerated!
