Simple Pan Seared Scallops

Looking for a simple and delicious scallop recipe? This is my favorite seared scallop recipe that highlights the sweet tenderness of the scallop with just a little ghee and lemon. It is perfect with a simple fennel salad and some crusty sourdough bread.

Simple Pan Seared Scallops

1 lb Sea Scallops

2 Tbsp Ghee

1 tsp Coarse Sea Salt

1 tsp Black Pepper

1 Lemon, cut into wedges


Spread a paper towel out and layer the scallops on, take another paper towel and dab the top so both sides are dry. Season the first side with half of the S&P.

Heat a cast iron skillet over med-high (erring on the side of higher heat) heat for a few minutes for the pan to heat up, you want a hot pan to sear the scallops. Add ghee and be sure to coat the bottom of pan.

Place the scallops seasoned side down (season the second side now) into the hot pan, making sure not to crowd! It’s better to cook a few at a time so you don’t bring the heat of the pan down too much.

Sear each side for about 1-2 minutes depending on the size of the scallop. Remove from the pan and serve with fresh lemon wedges!
