Sausage Stuffed Texas Twinkies

These smoked jalapeños are stuffed with a spicy Italian sausage and are a perfect starter at your next BBQ or gameday!




Sausage Stuffed Texas Twinkies


7-10 Jalapeños, halved and de-seeded

1/2 lb No Sugar Italian Sausage

1 lb No Sugar Bacon

No sugar BBQ sauce (opt)

Black Pepper (opt)


Directions:


Preheat smoker to 225


Rinse and dry jalapeños, cut in half (I like to leave the stem on, I think it look nice and it gives you a little handle for easier eating!), and deseed with a paring knife or small teaspoon.


Fill each jalapeño with about a tablespoon of sausage and tightly wrap with a slice of bacon. Place on smoker and smoke for about an hour, if you like the bacon more crisp raise the temp to 350 for the last 5-10 minutes. Baste with BBQ sauce if you like or serve it along side for dipping!
