Salted Caramel Chocolate Fat Bombs (Paleo, Keto)

These simple Paleo and keto friendly fat bombs boast a caramel-y infused chocolate filled with earthy, crunchy raw nuts. The secret is using brown butter ghee, it has a rich caramel flavor that shines, making this fat bomb taste like a pecan turtle, but without any of the sugar.

What is a Fat Bomb?


"Fat bombs" are a high-fat, low-carbohydrate snack that is often eaten by those following a low carb or keto lifestyle, or as part of a whole food diet.


While fat bombs can be healthy, keep in mind that not all fat bombs are created the same and the healthiness of it depends on the ingredients used. When made with whole food ingredients like unrefined coconut oil, raw cacao powder, grass-fed ghee, raw nuts and seeds, unsweetened nut butters and coconut, and more, fat bombs can be a healthy part of a nutrient dense diet.


Some benefits of fat bombs:

  • Satiety: Fat takes longer to digest than carbohydrates and proteins, helping you feel fuller for longer [1].

  • Energy: Fat is an excellent source of energy [2].

  • Brain health: Fats are essential for brain health, cognition, and function [3].

  • Hormone balance: Certain fats are necessary in the production of various hormones including sex hormones.

  • Cellular health: Healthy fats are necessary in cell membrane health and helps to protect DNA [4].



 

Why Grass-fed Butter and Ghee?


With so many choices out there, why do I recommend grass-fed butter or ghee?

  • Whole Food: One of the reasons I prefer to use only grass-fed butter in my dishes and cooking is because it is a whole food. Eating whole foods means that you are eating foods that are minimally processed and are closest to the way you would naturally find them.

  • Nutrient Dense: Grass-fed cows are healthier cows and their beef and butter are more nutrient dense since they are eating their natural diet.

  • Vitamin A: Grass-fed butter is high in beta-carotene which is converted to vitamin A in the body. Vitamin A is a fat soluble vitamin that is necessary in eye health, cellular division, and immune health [5].

  • Vitamin K: Vitamin K is essential in bone health and it is converted to vitamin K2 by our gut microbiome, which supports our heart health!

  • Higher in unsaturated fatty acids [6]

  • Higher in Omega-3's: support anti-inflammation pathways.

  • Conjugated linoleic acid (CLA): Grass-fed butter has been show to have a much higher concentration of CLA than butter from grain-fed cows. CLA's contain Omega-6 fatty acids that are converted in the body to arachidonic acid, the building block used to support inflammatory and anti-inflammatory pathways [3].

  • Taste and Satiety: Let's just be honest, fat makes our food taste wonderful and it promotes satiety from our meals, so why not make the healthiest whole food choice like grass-fed butter.

  • Butyrate: An essential short-chain fatty acid that is key to gut health, lowers inflammation, and has antioxidant properties.

Paleo Keto Chocolate Nut Fat Bomb Recipe

Salted Caramel Chocolate Fat Bomb Ingredients

Makes 12 fat bombs


¾ cup Brown Butter Ghee

1 cup Raw Nuts or seeds, chopped*

¼ cup Unsweetened Cacao Powder

1-2 Droppers of Liquid Stevia Drops

⅛ tsp Real Salt**

Flaked Sea Salt (opt)


* I used pecans and walnuts

** Add salt to the brown butter ghee chocolate if your ghee is unsalted


How to Make Salted Caramel Chocolate Fat Bombs


1. In a small saucepan, or microwave safe bowl melt the ghee and whisk in the cacao powder, stevia, and fine salt.


2. Remove from heat if using a saucepan and stir in the chopped nuts.


3. Transfer 1-2 Tbsp into lined cupcake liners.


4. Sprinkle with flaked sea salt if you want and freeze for 30-minutes.

Q: Can I use coconut oil or raw cacao butter to make chocolate caramel fat bombs?

A: The distinctive caramel-y flavor comes from the brown butter ghee, you could sub in regular ghee and get the flavor close, but, if you use coconut oil, it will taste like coconut.


Q: What is the best way to store chocolate caramel fat bombs?

A: I like to keep mine in an airtight container in the freezer, but you could keep them in the refrigerator as well. They will not stay solid at room temperature.


Q: What other nuts or seeds do you recommend to make chocolate caramel fat bombs?

A: You can use what ever you like! Cashews, almonds, pumpkin seeds, hemp seeds, sunflower seeds or macadamia nuts would all taste great!


Q: Are these salted caramel fat bombs Whole30 friendly?

A: No, but they are Paleo, gluten and dairy free, and keto friendly!
