Rosemary Roasted Delicata Squash

Squash season is pretty much perfection for me. I can't get enough of my favorites and delicata is at the top of my list. My favorite preparation is a simple roasted squash with lots of fresh, fragrant, and earthy rosemary. This dish beautifully complements any main and is also fantastic on a fall harvest salad!

Rosemary Roasted Delicata Squash


3-4 Delicata Squash, cut into half moons

1 Tbsp Duck Fat or Ghee

1.5 tsp Fine Sea salt

1 tsp Black pepper

1/2 tsp crushed red pepper (opt)

1 Tbsp fresh rosemary, finely chopped


Directions:


Preheat oven to 425


Rinse and dry squash, cut in half lengthwise and remove seeds with a spoon. Slice into half-moons and place into a large bowl. Add ghee/duck fat, salt, pepper, and crushed red pepper. Toss to evenly coat.


Spread into a single layer on a rimmed baking sheet and bake for 18-20 minutes until squash is tender and slightly browned. Add rosemary, stir and bake another 3-minutes.


Remove from oven and enjoy!
