Roasted Veggie Harvest Salad

I love a good salad and this one is amazing! Bitter arugula, warm roasted veggies, fresh apple and an apple cider vinaigrette to top it all off!




Roasted Veggie Harvest Salad:


4 cups Arugula

1/2 cup Brussels sprouts, roasted

1/2 cup Delicata squash, roasted

1/2 cup Apple, diced

1 Tbsp Pecans, chopped

1 Tbsp Dried Cranberries

Protein of choice: this was a garlic and bacon grilled pork tenderloin and boy was it juicy and delicious!


Directions:


Prepare all roasted veggies and dice up your apple.


On a plate layer arugula on the bottom and top with veggies, apples, and toppings of your choice, dress with an apple cider vinaigrette!
