Red Wine Vinaigrette

This beautifully balanced vinaigrette is a perfect dressing for every salad or as a marinade for chicken or fish and only takes a few minutes to put together! Simple, clean ingredients you probably already have in your kitchen!

Red Wine Vinaigrette
1 shallot, finely minced
1/2 cup Red Wine vinegar
1/3-1/2 cup EVOO
1 Tbsp Fresh Oregano, finely minced
2 Tbsp Fresh Lemon juice
1 tsp Dijon mustard (opt)
1/4 tsp Sea salt
1/8 tsp Black pepper
Directions:
In a small jar with a lid add all ingredients. Shake well and let it sit at room temp about an hour before serving to let all the flavors marry together. If making ahead, store in the refrigerator until ready to eat!
Pairs beautifully with a Chopped Greek Salad!
