Raw Lime Riced Cauliflower

This crunchy, zesty and fresh riced cauliflower is a perfect addition to a Buddha bowl, salad, or with your favorite main dish!



Cauliflower Rice

 

Raw Lime Riced Cauliflower


1 Head of cauliflower, grated

1 tsp Sea salt

1-2 Tbsp Fresh lime juice

2 Tbsp fresh cilantro, minced (opt)

1/4 tsp black pepper (omit for AIP)


Directions:


In large bowl, rice the cauliflower. Add the salt and pour into a mesh strainer. Let sit for 5-7 minutes. Gently squeeze out the water and place into a bowl. Add lime juice to taste, cilantro and any of your favorite spices.
