Paleo Fall Apart Smoked Ribs

Updated: Dec 12, 2021

These are the BEST ribs, period. They are even better with Bacon Potato Salad and Cilantro Lime Cole Slaw!

Smoked Ribs Recipe

Paleo Fall Apart Smoked Ribs

2 racks Baby Back ribs

1/2 cup Dry rub: Pink Paleo Powder or your choice

4 Tbsp fresh lemon juice, halved

1 cup Fresh Apple Cider, halved

No Sugar BBQ sauce (opt)

Directions:

The night before, prep ribs by removing the rib skin along the underside of the rack. Dry rub the top and bottom of the ribs, lay flat on a rimmed baking sheet, cover and set in refrigerator. **It’s best if you can do it the night before but they will still be D-E-licious if you can’t**

Preheat smoker to 225.

Add ribs and Smoke ribs for 2.5 hours uncovered.

How to Smoke Ribs

Prep to wrap the ribs in pink butcher paper and aluminum foil, add 2 Tbsp per rack of lemon juice and 1/2 cup of apple cider. Wrap and seal in butcher paper and foil and place back onto smoker for 2.5 hours to braise the ribs. **I don’t like my food to touch aluminum foil b/c of the toxic properties of Aluminum: I set up my wrap for the ribs to minimize contact with the foil with a sheet of peach butcher paper**

How to make smoked ribs

After 2.5 hours, carefully remove the ribs from the from the wrap. They will be super tender and falling off the bone so be as gentle as possible. Slather on your bbq sauce and smoke for 45-mins to set sauce and dry the ribs out a little. Carefully remove the ribs and enjoy! **mine were so tender they were falling apart..hence the pull apart look in the first picture!**
