Paleo Energy Bites

Looking for an easy, whole food, nutritious and delicious snack? Try these energy bites and you’ll never buy the processed version again!

Paleo Energy Bites
2 cup Raw Cashews
1 cup Unsweetened Coconut chips
1/2 cup Raw Pepitas
1/4 cup Raw Walnuts
1 tsp Cinnamon
1/4 tsp Sea salt
1/2 cup Unsweetened dried cranberries or raisins
6-8 Medjool Dates, pitted
Directions:
In a food processor process nuts, seeds, coconut, cinnamon and salt until finely processed. Add cranberries, start processor, add 1 date at a time until a nice “dough” comes together.
Roll into little bite sized pieces then roll in coconut, or press into a small dish, top with coconut and refrigerate for at least 2 hours before slicing.
Keeps in the fridge up to 2 weeks…if they last that long!
