Savory Paleo Butternut Squash Bisque

This simple soup is the perfect comfort food to support your health and wellness with immune boosting ingredients ginger and turmeric.




Savory Paleo Butternut Squash Bisque


1 small Butternut squash

1 Sweet potato

1 Yellow onion

3 cups Chicken broth

2 Carrots

2” Fresh Ginger root, microplaned

2” Fresh Turmeric root, microplaned

1 can Full-fat Coconut milk

2 tsp Sea salt

1/2 tsp Black pepper


Directions:


Preheat oven to 425


Halve, lengthwise the butternut squash, deseed and score the flesh. Place onto roasting pan. Rinse and add sweet potato and carrot. Cut onion in half, remove the peel and ends and place on baking dish. Bake for 45 minutes.


In a large dutch oven or soup pot, add roasted vegetable, broth, ginger and turmeric and blend using an immersion blender. If you don't have an immersion blender, blend ingredients in 2-3 batches and add to pot. Bring to a simmer, add coconut milk, salt and pepper. Stir and serve topped with a spoonful of coconut cream and your favorite seeds or toppings!
