Paleo Carrot Salad Recipe

Raw carrots can support female health in a variety of ways:

  • Supports hormonal balance: Carrots are rich in carotenoids, which are precursors to vitamin A. Vitamin A is essential for regulating hormones, particularly estrogen, and can help with hormonal balance, which is important for female endocrine health.

Carrots contain Biotin, vitamin B6 and vitamin K1:

Whole30 Carrot Salad Recipe

Korean Raw Carrot Salad Ingredients

Serves 2-4

3-4 Whole Carrots, shredded

1-2 Green Onions, diced

2 Tbsp Toasted Sesame Seed Oil

2 Tbsp Rice Wine Vinegar

1 Tbsp Pure Raw Honey* or Pure Maple Syrup

¼ tsp Fresh Ground Black Pepper

1 tsp Fine Real Salt

1 Tbsp Raw Sesame Seeds

1 tsp Gochugaru Flakes

*Substitute pure maple syrup for vegan/vegetarian

How to Make Korean Raw Carrot Salad

1. Rinse and brush the carrots with a veggie brush under cool water and dry.

2. Dice the green onion and shred the carrots.

3. In a medium bowl, combine the sesame oil, rice vinegar, honey, and spices, stir well to mix.

4. Add the onion and carrots and mix well to evenly coat.

Q: Can I substitute a different vinegar for the rice vinegar?

A: I personally like the sweet and tangy flavor of rice vinegar, but you can use ACV, red wine, or a champagne if you like!

Q: How long will Korean raw carrot salad keep?

A: Store it in the refrigerator in an airtight container and enjoy within 24-48 hours, the carrots will wilt the longer it sits in the vinaigrette.

Q: What is a good substitute for the gochugaru flakes if I can't find them?

A: You can use aleppo pepper power, it's a close flavor profile to gochugaru, or try a pinch of cayenne (it is much spicier than gochugaru) or crushed red pepper flakes.

Q: Do you peel your carrots before shredding them?

A: No, I like to give them a good scrub and leave the skins on the carrots as the skins contain over 50% of the antioxidants found in carrots!
