Fresh Kale Berry Salad

I love a good kale salad and I have found that there is a bit of a trick to get a tender, flavorful, and delicious kale salad.




Fresh Kale Berry Salad


1 Bunch Kale

2 Tbsp Fresh Lemon juice

2 Tbsp EVOO

1/4 tsp Sea salt

1/8 tsp Black pepper

1 cup Blackberries

1 cup Raspberries

2-3 Black Mission Figs, halved

2 Tbsp Raw Pepitas

Shaved parmesan (opt)


Directions:


Rinse kale well and shake off excess water, or use a salad spinner. De-stem the kale, only use the leaves and finely.


Add the lemon, EVOO, salt and pepper and massage for 60-90 seconds at least 15 minutes before eating to allow time for kale to marinate.


Top it with fresh fruits, nuts, or aged Parmesan!
