Grilled Mexican Street Corn

Easy and delicious fire roasted corn on the cob slathered in a creamy chili lime sauce and sprinkled with earthy cotija cheese! My favorite summer dishes are easy and simple and this grilled Mexican street corn recipe is the perfect easy side from tacos to barbecue...you're going to love it!



Gluten Free Mexican Corn Recipe

One of the reasons I love this easy Mexican corn recipe is because it's both gluten and dairy free! Make sure to check the labels of your mayonnaise to ensure it is gluten free as there are some varieties out there than contain malt vinegar, which adds gluten to the condiment.



 

Why Organic Corn vs Conventional Corn?


Although not everything I buy is organic, a good majority of it is, why? Well, it has to do with GMO's and pesticides. Many of the grain and especially conventionally grown corn and corn products out on market shelves are derived from either hybridized or genetically modified (GM) ingredients and are treated with toxic chemicals like glyphosate (RoundUp) which ends up in your body when you consume these foods.


With corn being on the top of the list as one of the dirty dozen, each summer I only buy corn that is organic, period. So if it is available to you, try and source certain organic foods to reduce you and your family's exposure to these toxins.


Environmental Impact


Across the globe, over 80% of all the GMO and conventional crops that are cultivated have been modified against herbicides such as RoundUp. This means that the crops have had their DNA altered so that they are resistant against chemicals like RoundUp allowing for these toxic chemicals to be sprayed on the crops, killing other plants and pests without harming the crop itself. The problem with chemicals like glyphosate is that they are now part of the food you eat, and have given rise to "superbugs" and "superweeds" that have become resistant to it and can now only be killed with chemicals that are even more toxic like 2,4-dichlorophenoxyacetic acid (2,4-D, an ingredient in Agent Orange) shown to correlate with thyroid disorders, hormonal disorders, decreased fertility, birth defects, and cancer [1].


Human Impact


In recent studies, there have been indications of the negative impact GMO foods are having when consumed. These foods are showing that they may have toxicity on organs, organ systems, and immune health [2]. Consuming foods that have been genetically modified exposes you to a slurry of toxic chemicals, like glyphosate, that has been shown to be carcinogenic [3].


So grab some organic corn on the cob and let's get cooking!


Mexican Corn Recipe

Grilled Mexican Street Corn Ingredients

Serves 4-8


4-6 Ears Grilled Corn on the Cob

1/2 cup No Sugar Mayonnaise

1.5-2 Tbsp Fresh Lime Juice

1/2 tsp Chili Powder

1/4 tsp Smoked Paprika OR Chipotle Powder if you like a little spice

1/4 tsp Fine Sea Salt OR Pink Salt

Grated Cotija or Parmesan Cheese for topping

Fresh Cracked Black Pepper for topping


How to Make Grilled Mexican Street Corn


1. Soak the corn with the husks on in cold water for at least an hour.


2. Preheat the grill to 425 degrees.


3. Remove the silk from the corn: do this by pulling the husk down about 1/3-1/2 of the way down the cob, pull off as much silk as you can then close up the husk around the cob.


4. Grill the corn for 12-15 minutes, rotating every few minutes so each side of the cob is over the fire.


5. Make the chili lime sauce: add the mayonnaise, lime juice, chili powder, smoked paprika and salt to a medium bowl. Whisk well to combine.


6. Remove the corn and pull the husks down 1/2 of the way to all of the way down.


7. Generously coat the corn with the chili lime sauce and top with fresh grated cotija or parmesan cheese and black pepper.

Q: Do I have to use mayonnaise for the chili lime sauce on the Mexican corn?

A: No, feel free to substitute with a plain yogurt or sour cream.


Q: Can I make grilled Mexican corn ahead of time?

A: Yes, I would go ahead and soak the corn and make the sauce so when you are ready all you have to do is grill the corn!


Q: What is a good substitute for grated parmesan that is dairy free?

A: Try grinding up some raw walnuts and use that instead!
