Ginger Turkey Meatballs with Spicy Gochujang Sauce

Looking for an easy weeknight meal now that school and fall activities are in full swing? This fabulous meal comes together in about 30 minutes and will satisfy your hungry family!


These flavorful and tasty meatballs are Paleo and Whole30 friendly and pair perfectly over some brown rice and veggies for a healthy, nutritious bowl!




Ginger Turkey Meatballs


1 tsp coconut oil

1/2 cup Yellow onion, finely diced

1 Carrot, shredded

2 lb Ground Turkey

1 Tbsp Ground Ginger

1/2 cup Green onion, diced

3-4 Cloves Garlic, finely minced

1 Tbsp Coconut aminos

1 tsp Fish sauce

1/2 tsp Black pepper

1 tsp Sea salt

1.5-2 Tbsp Almond flour


Directions:


Preheat oven to 425 and line a bar pan with parchment or lightly grease with coconut oil.


Sauté carrot and onion in coconut oil over med heat 3-5 minutes until softened. Add to large bowl, add in turkey, ginger, garlic, green onion, salt and pepper and remaining ingredients.


Form into meatballs and place on baking sheet and bake for approximately 15-18 minutes until fully cooked.


Serve with rice, a cold noodle salad, or as a bowl with Spicy Gochujang Sauce!
