Smoked Chicken Texas Twinkies

These insanely delicious Paleo poppers are so good as an appetizer, main course, or snack on Game Day while you watch your favorite team! Try them and you'll never go back to boring cream cheese again!
Epic Chicken Stuffed Texas Twinkies
10-12 Large Jalapeños, halved and de-seeded
3-4 Chicken Breasts, boneless and skinless
1 Red onion, 1.5-2”pieces
20-24 Strips No-sugar Bacon
1 Tbsp BBQ seasoning (no sugar for Paleo) OR 1 tsp Sea Salt &1 tsp Black Pepper
Preheat smoker to 225
Halve and de-seed jalapeños with a teaspoon, set aside. Cut onion into 1.5-2” slices, set aside with jalapeños. Cut chicken into 2” strips and place in a medium bowl, seasoning with BBQ seasoning or salt and pepper.
Layer chicken and onion into jalapeño, wrap with bacon and set on a baking sheet. Once all Texas Twinkies are ready, option to season the outside with more BBQ seasoning or S&P.
Smoke on the smoker for about 45 minutes, turning heat up to 350 for last 10-15 minutes to crisp bacon.
Remove from heat and serve with your favorite no-sugar BBQ sauce!
