Easy Kielbasa with Peppers, Onions & Kale

Great for a weeknight meal, this dish comes together in less than 30-minutes. For Paleo and Whole30 options, be sure your kielbasas is sugar-free and serve with a side of steamed broccoli and cauliflower rice!
Easy Kielbasa with Peppers, Onions and Kale
2 Packages No Sugar Kielbasa, 1-1.5”pieces
2 Red Bell Peppers, julienned
1 Yellow Onion, sliced
1/2 tsp Sea salt
1/2 tsp Black pepper
4-5 Stems Tuscan Kale, chopped
2 cloves Garlic, finely minced
In a large skillet over medium high heat, sauté sausage until fully warmed through and sides are browned, about 10-12 minutes.
Remove from heat and reserve 1 Tbsp of fat and sauté peppers and onions over high heat for 3-5 minutes until softened. Add garlic and kale and sauté for 1 more minute. Add sausage, toss and serve with steamed broccoli, potatoes, or rice!
