Easy Crispy Crock Pot Carnitas

Busy families need easy, nutritious and delicious meals. These Paleo friendly crispy and savory carnitas cook while you're working and are ready for dinner!

Easy Crock Pot Carnitas
3 lb bone in pork shoulder/Boston butt
1 orange, juiced
2 limes, juiced
2 Tbsp chili powder
1 Tbsp smoked paprika
2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
2 tsp sea salt
Topping Suggestions:
Diced white onion
Cilantro
Lime Wedges
Fresh Diced Pineapple
Pico de Gallo
Directions:
Mix all juices and spices together in the bottom of the crock pot. Cut pork into 2” pieces and add to crock pot, stir well to coat the pork, and don’t forget the bone!! Cover and cook low 6-8 hours until tender and pork easily falls apart.
Now this is where the magic happens...Preheat oven to broil.
Remove meat with slotted spoon and place on baking sheet, shredding the pork and layering in thin layer. Pour the leftover juices into a small saucepan and simmer over medium-high heat and reduce by half.
Broil meat stirring every few minutes until approximately 75% of it has browned and crisped up. Remove from oven and pour in 3/4 of a cup of the reduced juices, stirring to distribute. Enjoy in tacos, lettuce wraps, burrito, bowls, or salads!
