Duck Fat Roasted Sweet Potato Fries

Sweet potato fries take on a whole new level of delicious when roasted in rich duck fat and fresh rosemary, you may never eat a plain sweet potato fry again!



Duck Fat Roasted Sweet Potato Fries

2 medium Sweet potatoes

1/4 cup Duck fat

1 1/2 tsp Sea salt

1/2 tsp Black Pepper

Optional: 1 tsp Crushed red pepper

Optional: 1 Tbsp fresh Rosemary, minced


Directions:


Preheat oven to 425 degrees


Cut sweet potato into 1/2" wide x 3" sticks. Add to a large bowl with duck fat, S&P and red pepper. Spread over a baking sheet in 1 layer, use multiple baking sheets if necessary. Bake for 20-25 minutes, sprinkle over rosemary, toss, and bake another 5-minutes.
