Chopped Greek Salad

The perfect chopped summer salad loaded with juicy tomatoes, crisp cucumbers, briny olives and earthy onions dressed with a simple red wine vinaigrette! It goes great with Grilled salmon or Smoked chicken. This recipes makes a lot, so it’s perfect for lunch the next day, and just omit the feta for a Paleo/Whole30/Dairy-free Option.

Chopped Greek Salad
1 Small Red onion, diced
1 English Cucumber, diced
8oz Grape Tomatoes, sliced in half
2 Red Bell peppers, diced
1/2 cup Kalamata Olives
3 oz Crumbled Feta (omit for Paleo/Whole30/Dairy-free)
1/2 cup Artichoke hearts, quartered (opt)
1/4 cup Pepperocini, sliced (opt)
1/2 c Red wine vinaigrette
Directions:
Chop all vegetables and place in a large bowl. When ready to serve, stir in about 1/2 cup of red wine vinaigrette and feta, serve immediately!
