Chioggia Raw Beet Slaw

This colorful nutrient packed dish is a flavorful twist on your typical slaw recipe. The earthy beets are beautifully complimented by the sweet carrot and apples and balanced by the tart dressing!

I found some beautiful chioggia beets and with their sweet and mild flavor I instantly thought about a raw beet slaw to showcase their gorgeous bright colors and flavor!

Chioggia Raw Beet Slaw

1 large raw Chioggia Beet, shredded

1 large Carrot, shredded

1 Cpple, shredded

1 Tbsp EVOO

2 Tbsp Fresh Lemon juice

1 Tbsp Pure Maple syrup (opt)

1/4 tsp Sea salt

1/8 tsp Black pepper


Peel beets and rinse carrot and apple well, no need to peel these and throw all those nutrients. Using a food processor (shredding blade) or a box shredder, shred all the veggies and apple. Add to a large bowl.

In a small bowl whisk the EVOO, lemon juice, maple syrup and S&P. Pour over the veggies and mix well. Serve with burgers, grilled chicken or your favorite mains.
