Chioggia Raw Beet Slaw (Paleo, Whole30)

Sweet and mild Chioggia beets with lots of sweet apple and carrots in a beautiful fresh slaw for all your summer meals. This colorful nutrient packed dish is a flavorful twist on your typical slaw recipe and is the perfect accompaniment to your grilled salmon, burgers and barbecue this summer. You will love the beautiful balance between the sweetness of this dish with the simple tangy lemon vinaigrette and of course, this whole food recipe is Paleo and Whole30 friendly!



Raw Beet Salad

I found some beautiful Chioggia beets the other day and thought that a beautiful raw beet slaw would be the perfect way to showcase their gorgeous bright colors and flavor! I love finding new ways to add more variety of produce to my family's diet and this easy slaw hit the nail on the head. It's sweet, tangy and is almost like a next level version of a carrot salad, just more nutritious and tasty! Add this to your pull pork sammies, fish tacos, or along side your grilled chicken burger and you will not be disappointed!



 

Why Beets are So Good for You!


If you already like beets, get ready to fall in love with these nutrient packed powerhouses!!


Beets contain vitamins C, B6 and a good amount of B9 (folate.)

  • Vitamin C is a powerful antioxidant that works to neutralize free radicals and reduce oxidative stress that can lead to disease.

  • Vitamin B6 is essential in a healthy and strong immune system [1].

  • Folate is an essential B vitamin that is involved metabolizing carbohydrates into energy, the production of our red and white blood cells, and is crucial during periods of growth in our lives: during pregnancy, infancy, and adolescence.

The betaine found in both fresh and cooked beets is a nutrient that promotes the flow of bile supporting fat emulsification leading to increased absorption.

Chioggia Raw Beet Slaw Ingredients

Serves 4-6


1 large raw Chioggia Beet, shredded

1 large Carrot, shredded

1 Apple, shredded

1 Tbsp EVOO or Avocado Oil

2 Tbsp Fresh Lemon Juice

1 Tbsp Pure Maple Syrup (opt)

1/4 tsp Fine Sea Salt or Pink Salt

1/8 tsp Ground Black Pepper


How to Make Chioggia Raw Beet Slaw


1. Peel the beets, trim off the root and stem, and rinse (I love my veggie brush) the carrot and apple well, no need to peel these and throw away all those nutrients.


2. Using a food processor (shredding blade) or a box shredder, shred all the veggies and apple and transfer to a large bowl.


3. In a small bowl whisk together the EVOO, lemon juice, maple syrup and S&P.


4. Pour the vinaigrette over the chioggia slaw and mix well.


Serve and enjoy with burgers, grilled chicken or your favorite mains.

Q: Can I make this ahead of time?

A: Yes, but keep in mind that any marinaded slaw recipe will soften the veggies the longer it sits. I love this slaw fresh and crisp and the next day when it has marinated and all the flavors have melded together.


Q: What does a chioggia beet taste like?

A: Chioggia beets still have that delicious sweet earthy beet flavor we all love, just a little more mild than red beets.


Q: Can I use red beets for this recipe instead?

A: Absolutely! You can use any type of beet you love!
