Broccoli Radish Salad

I love broccoli salad, the combination of the crunchy broccoli, sweet cranberries, and savory bacon have me craving this at least once a month!! This time I added some shredded radish for a little spice and it was wonderful!




Broccoli Radish Salad


4 cups Broccoli florets, finely chopped

7-10 Radishes, shredded (about 1 cup)

1/2 Red onion, finely diced

4 Strips Bacon, diced

1/2 cup Dried, Sugar-free Cranberries

1/2 cup Raw Pecans, chopped

1/2 cup Raw Pepitas/Pumpkin seeds

3/4 cup Mayonnaise

1/4 cup ACV

1 tsp Sea salt

1 tsp Black pepper


Directions:


Fry bacon over low/medium heat in a skillet, remove from pan and drain on a plate lined with a paper towel.


In a large bowl combine mayo, ACV, salt and pepper, mix well. Add bacon and remaining ingredients and stir well to combine. Enjoy!
