Blueberry Compote (Paleo, Whole30)

This sweet and juicy blueberry compote is the perfect topping for everything from a Paleo cheesecake to some baked brie for a quick and yummy appetizer. I love to keep a jar on hand to stir into my favorite yogurt or to add it to a quick and delicious chia pudding!

I always double this recipe as my family loves to enjoy this easy and healthy compote in so many ways. It's a delicious and healthy way to add more fruit to your way of eating!


 

Why Blueberries are So Good For You!


Blueberries are a staple in my house whether it is fresh plump summer berries, or frozen in the winter, these gorgeous little gems are a must. Why do I prefer frozen blueberries in the winter? Well, it's all about nutrient density.


Blueberries are in season March-May which means the fresh berries you buy in the stores during these months are the most nutrient dense. But, I love blueberries all year long, so I buy frozen in the off season months because these berries were picked at the peak of the blueberry season and frozen, guaranteeing a nutritious berry all year long! The beauty of this recipe is that you can use fresh or frozen depending on the season!


Vitamins

  • Vitamin C: Powerful antioxidant found in many fruits and vegetables that helps to neutralize free radicals and reduce oxidative stress.

  • Vitamin K: Fat-soluble vitamin that is converted to Vitamin K2 in your gut and supports bone and heart health.

Minerals

  • Calcium: Essential mineral necessary in building strong healthy bones and supporting a healthy cardiovascular system.

  • Potassium: Mineral is an electrolyte supporting metabolic pathways, regulates heartbeat, is necessary in normal cell function [2].

  • Manganese: An essential mineral that plays many roles in our bodies from supporting healthy nerve and brain function, to blood sugar regulation, and the metabolism of the fats and carbohydrates we consume.

Antioxidants

Whole30 Blueberry Compote Recipe

Blueberry Compote Ingredients

Makes about 24-26 ounces

3.5-4 cups Organic Blueberries*

2 Tbsp Fresh Lemon Juice

¼ cup + 2 Tbsp Cool Filtered Water

½ cup Organic Coconut Sugar

1 tsp Grass-Fed Beef Gelatin

¼ tsp Fine Real Salt

1 tsp Pure Vanilla Extract


*Fresh or Frozen Blueberries


How to Make Blueberry Compote


1. In a small bowl combine the lemon juice, 2 tbsp water and gelatin and mix well to dissolve, set aside.


2. In a medium saucepan add the remaining ingredients and heat over low-med heat for 10-ish minutes until the blueberries have broken down and the sugar has dissolved.


3. Stir in the lemon and gelatin mixture and bring the blueberries back to a low simmer for 1-2 minutes ensuring all the gelatin has dissolved.


4. Transfer to a clean jar and cool to room temperature before refrigerating.


5. Refrigerate at least 2-hours before serving to allow blueberry compote to set.
