Almond Joy Energy Bites

Summer means kids are home from school and if yours are anything like mine, they are eating machines! I wanted to come up with a healthy whole food snack for them and this Almond Joy energy bite was born! This will quickly become a family favorite in your home as it has mine.




Almond Joy Energy Bites


1 3/4 cup Medjool dates, pitted

3/4 cup Raw Almonds

3/4 cup Unsweetened Coconut, flaked

1 tsp Vanilla

1/2 tsp Sea salt

1/4 cup Raw Cacao powder

Shredded coconut for rolling (opt)


Directions:


In a food processor, pulse and chop up dates until broken down but not combined into a paste.


Add remaining ingredients and process until it resembles a coarse crumbly texture. Pinch to see if it “sticks” together, if not, add 1-2 dates at a time until desired texture is reached.


I like to use a small scoop to and roll dough into bite sized pieces, roll into shredded coconut and store in refrigerator up to a week!
